Vegetarian Locro
Surprise your palate with a vegetarian locro. In this case, we also add aloe vera juice that, in addition to being healthy, acts as a thickener

Ingredients

Olive oil
Salt
Pepper
1/2 pumpkin
1 onion
1 carrot
150 g Poroto
150 g Corn
Smoked paprika
Cumin
2 green onion
Vegetable broth c / n
100 grs Peas
Parsley

Sofrito:

Olive oil
Green onion
Smoked paprika
Ground chili
2 tablespoons of natural organic aloe vera juice



Preparation


1. Sauté the onion, carrot and half of the pumpkin in large cubes in olive, salt and pepper and cook.

2. Add the rest of the grated squash. Add the corn and beans hydrated overnight. Seasoning. Add the chopped green onion, the broth. I cooked for an hour and a half.

3. For the sofrito, sauté the green onion with the paprika, the ground chili and 2 tablespoons of aloe.

4. I served in a casserole with the sofrito plus the peas and parsley.
