1 cup of almond flour (you can prepare it at home by crushing the almonds in a blender or processor)
1.5 cups coconut flour OR oatmeal
3 teaspoons stevia powder
1/4 cup coconut milk (or almonds)
1/8 cup coconut oil, melted or shortening
1 cup peanut butter
1 can of coconut cream
6 teaspoons stevia powder
1/4 cup unflavored gelatin
1 cup of fresh berries (such as strawberries and blackberries)
In the deep bowl, mix all the ingredients of the base with a spatula and make sure they are well united. Use your hands to mix until it is like a dough.
Take the mixture to the previously greased mold. With the help of your hands, crush the dough and cover the entire base of the mold. TIP: Use a glass (smeared with coconut oil on the base) to crush it well and make it even.
Then put it in the oven for ten minutes.
Meanwhile, mix all the ingredients for the filling in the blender.
When the mixture is creamy, put it in a medium saucepan over medium heat for two minutes, mixing constantly. Let stand.
Take the base out of the oven.
Once the temperature of the filling has dropped, turn it over the base in the pan.
It takes an hour to the fridge.
When you see that its texture is firm, take it out of the refrigerator, cut it into pieces and enjoy with red fruit jam (optional).
To prepare the jam, blend 1 cup of fruits, 1/2 cup of water, 1 tablespoon of chia and 1 teaspoon of stevia. Take the mixture to a pot and put on medium heat for 3 minutes. Let stand and go!
