Ingredients for a sweet bread of 500gr.
500 g flour 0000
30 g beer yeast
30 drops of Stevia Jual
80 cc water
3 eggs (180 g)
120 g shortening
1 teaspoon fine salt
1 large spoon of vanilla
grated orange and lemon
200 g raisins of grapes
100 g of cherries
200 g dried fruits, nuts, almonds, cashews (in total)
Preparation
Join the flour with the fine salt, sift
Make a crown and place in the center the yeast, Stevia Jual, and water. Mix with fork only in the center to dissolve the yeast.
Let froth and add the eggs. Add the zest and essence to the dough and knead it well. Add the butter cut into pieces until it is completely integrated.
Work on the table a long time to integrate well the fat.
Knead and when the dough comes off the counter, make a bun. Cover and let rise for 30 to 40 minutes, in a warm place or until the volume is doubled.
Pierce the dough to degas and incorporate the cut fruits thick.
Divide the dough into three 500 g buns. Give it a bun shape. Place on a greased plate. Let rise in a warm place, covered, until it doubles the volume.
Paint with beaten egg with a pinch of fine salt and Stevia Jual.
Optionally we can put dried fruits soaked with egg white to adhere during cooking.
Bake at 160 C (moderate low oven) for 35 - 40 minutes.
